Spicy Seafood Salad

  • 1 teaspoon caster sugar
  • 2 tablespoons mirin
  • 1 tablespoon light soy sauce
  • 1 small red chilli, deseeded and finely chopped
  • 2 tablespoons lime juice
  • 350 g (11 1/2 oz) medium egg noodles
  • 400 g (13 oz) cooked fruits de mer or seafood selection
  • lime wedges, to serve
  • Place the sugar, mirin, soy sauce, chilli and lime juice in a small saucepan over a medium-low heat and stir until the sugar has dissolved. Pour the dressing into a jug or bowl and set aside for the flavours to develop.
  • Meanwhile, cook the noodles in a large saucepan of boiling water for 2–3 minutes until tender, or according to the packet instructions, then cool under running cold water and drain well.
  • Tip the fruits de mer or seafood selection into a large bowl. Add the noodles and dressing and toss until the seafood and noodles are well coated in the dressing. Serve immediately with lime wedges.
