400 g (13 oz) cooked fruits de mer or seafood selection

Place the sugar, mirin, soy sauce, chilli and lime juice in a small saucepan over a medium-low heat and stir until the sugar has dissolved. Pour the dressing into a jug or bowl and set aside for the flavours to develop.
Meanwhile, cook the noodles in a large saucepan of boiling water for 2–3 minutes until tender, or according to the packet instructions, then cool under running cold water and drain well.
Tip the fruits de mer or seafood selection into a large bowl. Add the noodles and dressing and toss until the seafood and noodles are well coated in the dressing. Serve immediately with lime wedges.
