Spicy Sausage and Rocket Pasta

  • 250 g (8 oz) penne or other pasta
  • 2 tablespoons olive oil
  • 8 Italian-style sausages, skins removed
  • 400 ml (14 fl oz) passata
  • 1 teaspoon dried chilli flakes
  • 4 handfuls of rocket leaves
  • salt and pepper
  • grated Parmesan cheese, to serve
  • Cook the penne in a large saucepan of lightly salted boiling water for about 10 minutes, or until just tender.
  • Meanwhile, heat the oil in a large frying pan, break the sausages into small pieces and add to the pan, then fry for 3–4 minutes, turning occasionally, until browned.
  • Add the passata and chilli flakes and season. Bring to the boil, then reduce the heat and simmer for 5 minutes until the sauce is slightly reduced and the sausagemeat is cooked through.
  • Drain the pasta, then add to the sauce and toss well to coat. Remove from the heat, stir in the rocket and serve with grated Parmesan.
