Place the beef in a bowl and mix thoroughly with the curry paste so that it is well coated.
Heat the oil in a frying pan and cook the beef over a medium heat for 2–3 minutes until browned but still slightly pink.
Meanwhile, fill the tortilla wraps with the bean sprouts and shredded lettuce. Top with the spicy beef strips, scatter over the chopped peanuts and squeeze over a little lime juice, if using. Roll up the wraps tightly to serve.
