Spicy Peanut and Beef Wrap

  • 200 g (7 oz) stir-fry beef strips
  • 2 teaspoon Thai red curry paste
  • 2 tablespoons vegetable oil
  • 2 large soft tortilla wraps
  • 75 g (3 oz) bean sprouts
  • 2 small handfuls of shredded Iceberg lettuce
  • 1 1/2 tablespoons roasted peanuts, roughly chopped
  • 2 lime quarters (optional)
  • Place the beef in a bowl and mix thoroughly with the curry paste so that it is well coated.
  • Heat the oil in a frying pan and cook the beef over a medium heat for 2–3 minutes until browned but still slightly pink.
  • Meanwhile, fill the tortilla wraps with the bean sprouts and shredded lettuce. Top with the spicy beef strips, scatter over the chopped peanuts and squeeze over a little lime juice, if using. Roll up the wraps tightly to serve.
