Spicy Mango and Duck Salad

  • 2 x 200g (7 oz) packs mango chunks
  • 4 shop-bought ready-cooked, smoked duck breasts, skin removed and roughly shredded
  • 8 tablespoons shop-bought mayonnaise
  • 4 tablespoons sweet chilli sauce
  • juice of 1 lime
  • salt and pepper
  • Put the mango and shredded duck in a large salad bowl and season well.
  • Mix together the mayonnaise, sweet chilli sauce and lime juice in a bowl. Pour the dressing over the salad, toss to mix well and serve.
