• 6 large prepared fresh sardines
  • 1 teaspoon ready-chopped garlic
  • finely grated rind and juice of ½ lemon
  • 1 teaspoon ground cumin
  • 1 teaspoon hot smoked paprika
  • 1 tablespoon olive oil
  • salt and pepper
  • ciabatta bread, toasted
  • crisp green salad
  • lemon wedges

Use a sharp knife to make 3 slashes on each side of the fish, cutting through the skin and flesh to the bone. Arrange the sardines on a baking sheet.

Mix together all the remaining ingredients, season to taste then rub all over the fish to coat thoroughly.

Cook the sardines under a preheated hot grill or on a barbecue, turning once, for 3–5 minutes or until cooked through. Serve with toasted ciabatta, a crisp green salad and lemon wedges.
