Spicy Griddled Pineapple

  • 8 slices of fresh pineapple, peeled and cored
  • 1 tablespoon clear honey
  • pinch of dried chilli flakes
  • pinch of ground cinnamon
  • crème fraîche or natural yogurt, to serve
  • Heat a frying pan or griddle pan until very hot. Add the pineapple slices and cook until they start to caramelize. Turn them over just once.
  • Add the honey, chilli flakes and cinnamon and cook until the mixture starts to bubble – this will not take long.
  • Serve the pineapple slices drizzled with the spicy honey and a dollop of crème fraîche or natural yogurt.
