Spicy Dippers

  • 1 tablespoon olive or vegetable oil
  • 4 corn tortillas
  • 2 teaspoons Mexican or preferred spice mix
  • salsas and dips, to serve
  • Brush the oil lightly over the corn tortillas. Sprinkle 1/2 teaspoon of the spice mix evenly over each tortilla, then cut each tortilla into 8 wedges.
  • Place the wedges, spice side up, on 2 large baking sheets and bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 5–7 minutes until crisp. Transfer to wire racks to cool slightly, then serve warm with salsas and dips.
