Spicy Chilli Dogs

  • 12 good-quality pork sausages
  • 4 tablespoons sweet chilli sauce
  • 8 tablespoons tomato ketchup
  • 2 teaspoons hot chilli sauce
  • 4 tablespoons hoisin sauce
  • 2 tablespoons runny honey
  • 2 teaspoons Dijon or English mustard
  • 12 split hot dog rolls
  • 12 Baby Gem lettuce leaves
  • Put the sausages in a roasting tin and insert a metal skewer through each lengthways. Mix together the remaining ingredients in a bowl, pour over the sausages and toss to mix well.
  • Place in a preheated oven, 200°C (400°F), Gas Mark 6, for 20–25 minutes or until golden and cooked through.
  • To serve, place 1 lettuce leaf in each of the hot dog rolls. Carefully remove the skewers from the sausages and serve in the rolls.
