Spicy Chicken Wings with Avocado Salsa

  • 2 tablespoons oil
  • 4 tablespoons tomato ketchup
  • 3 tablespoons sweet chilli sauce
  • 1/2 teaspoon chilli flakes
  • 1 tablespoon clear honey
  • 1/2 teaspoons ground black pepper
  • 750 g (1 1/2 lb) chicken wings
  • 1 avocado, chopped
  • 125 g (4 oz) cherry plum tomatoes, quartered
  • 2 tablespoons fresh chopped coriander
  • finely grated rind and juice of 1 lime
  • 1 teaspoon olive oil
  • ground black pepper
  • Mix together the oil, ketchup, chilli sauce, chilli flakes, honey and pepper in a large mixing bowl, add the chicken wings and stir well to coat each in the mixture.
  • Arrange the wings in a single layer on a foil-lined grill rack and cook under a preheated hot grill for 10 minutes on one side, before turning and cooking for 5–7 minutes on the other until the chicken is cooked through.
  • Meanwhile, make the avocado salsa by mixing together all the salsa ingredients in a small bowl and seasoning generously with pepper. Serve the chicken piping hot with the salsa separately and crusty bread to mop up the juices, if liked.
