Spicy Brunch Quesadillas

  • 200 g (7 oz) can refried beans
  • 4 plain tortilla wraps
  • 1 small avocado, stoned, peeled and diced
  • 2 tomatoes, diced
  • 125 g (4 oz) sliced mozzarella or grated Cheddar cheese
  • shredded Iceberg lettuce (optional), to serve
  • Spread the refried beans over 2 of the tortillas, then scatter over the avocado and tomato. Scatter with the mozzarella or grated Cheddar, then top each with another tortilla.
  • Heat a large frying pan and toast 1 of the quesadillas for 1–2 minutes over a medium heat before flipping it over to toast the other side. Repeat with the second quesadilla. Serve in wedges with shredded lettuce, if desired.
