Spicy Beef Koftas with Mint Relish

Ingredients
  • 600 g (1 lb 5 oz) minced beef
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 red chilli, deseeded and chopped
  • small handful of mint, chopped
  • small handful of coriander, chopped
  • 1 teaspoon ground ginger
  • 1 teaspoon mild chilli powder
  • 1 teaspoon ground cumin
  • 2 teaspoons crushed coriander seeds
  • 1 egg, beaten
  • 100 g (3 1/2 oz) fresh white breadcrumbs
  • 2 tablespoons sunflower oil
  • salt and pepper
  • lime wedges, to serve
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1/2 cucumber, finely chopped
  • 150 g (5 oz) natural yogurt
  • 4 tablespoons chopped mint leaves
  • 2 tablespoons mint jelly
  • juice of 1 lime
Directions
  • To make the mint relish, mix together all the ingredients in a bowl, cover and chill until needed.
  • Put the beef, red onion, garlic, red chilli and herbs in a food processor or blender. Add the ground ginger, chilli powder, cumin, coriander seeds and egg. Season well, then process until fairly smooth and well combined.
  • Divide the mixture into 16 balls. Roll each ball in the breadcrumbs, place on a baking sheet and drizzle with the oil. Place in a preheated oven, 200°C (400°F), Gas Mark 6, for 15–20 minutes or until cooked through.
  • Serve the beef koftas on cocktail sticks with the mint relish and lime wedges to squeeze over.
