• 575 g (1 lb 3 oz) lean minced beef
  • 2 garlic cloves, crushed
  • 1 red onion, finely chopped
  • 1 hot red chilli, finely chopped
  • 1 bunch of parsley, chopped
  • 1 tablespoon Worcestershire sauce
  • 1 egg, beaten
  • 4 rolls, such as wholemeal or Granary, split
  • hot salad leaves, such as mizuna or rocket
  • 1 beefsteak tomato, sliced
  • salt and pepper
  • snipped chives, to garnish
  • burger relish
  • griddled new potatoes

Put the minced beef, garlic, red onion, chilli and parsley in a large bowl. Add the Worcestershire sauce, beaten egg and a little salt and pepper and mix well.

Heat a griddle pan. Using your hands, divide the minced meat mixture into 4 and shape into burgers. Cook the burgers in the griddle pan for 3 minutes on each side for rare, 5 minutes for medium or 7 minutes for well done.

Place the roll halves under a preheated hot grill and toast on one side. Fill each bun with some hot salad leaves, some tomato slices and a griddled burger, garnish with snipped chives and serve with your favourite relish and griddled new potatoes.
