Spiced Tuna Open Sandwiches

Ingredients
  • 2 x 250 g (8 oz) cans tuna, drained
  • 4 tablespoons mayonnaise
  • 2 tablespoons sliced celery
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon finely chopped red onion
  • juice of 1/2 lemon
  • 1/4 cucumber, thinly sliced
  • 4 slices of pumperknickel bread
  • a few sprigs of watercress
  • lemon wedges, to serve
Directions
  • Flake the tuna in a bowl, then mix together with the mayonnaise, celery, paprika, cayenne pepper, onion and lemon juice.
  • Arrange the slices of cucumber on the pumpernickel, then top with the tuna mixture. Top with a few sprigs of watercress.
  • Serve with lemon wedges.
