Spiced Raisin and Cranberry Cookies

Ingredients
  • 125 g (4 oz) butter
  • 125 g (4 oz) light muscovado sugar
  • 1 tablespoon golden syrup
  • 125 g (4 oz) self-raising flour
  • 1/2 teaspoon ground mixed spice
  • 125 g (4 oz) porridge oats
  • 50 g (2 oz) raisins
  • 50 g (2 oz) dried cranberries
Directions
  • Line 2 baking sheets with baking paper.
  • Heat the butter, sugar and golden syrup in a saucepan until just melted. Remove from the pan and stir in the flour, mixed spice, oats and fruit.
  • Roll the mixture into 8 balls, place on the prepared baking sheets and flatten slightly. Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 10–12 minutes.
