200 g (7 oz) fresh paneer (Indian cheese) or feta cheese, roughly chopped
3 tablespoons finely chopped red onion
1 green chilli, deseeded and finely sliced
large handful fresh coriander, finely chopped
150 g (5 oz) baby plum tomatoes, quartered
2 tablespoons extra virgin olive oil, plus extra for drizzling (optional)
juice and finely grated zest of 1 lime
12 slices ciabatta bread
salt and pepper
Place the cheese in a mixing bowl. Add the onions, chilli, coriander, tomatoes, olive oil, lime juice and zest and then season. Stir well and allow to sit while you toast or griddle the ciabatta slices.
Spoon the cheese mixture over the toasted ciabatta slices and serve immediately, drizzled with extra olive oil if desired.
