  • 4 pieces of haddock fillet, about 150 g (5 oz) each
  • ½ teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 garlic clove, crushed
  • 5 cm (2 inch) fresh root ginger, peeled and finely grated
  • ½ teaspoon ground coriander
  • 1 tablespoon chopped coriander
  • ½ teaspoon turmeric
  • 1 tablespoon olive oil
  • 500 g (1 lb) potatoes, peeled and cut into chunks
  • 1 teaspoon cumin seeds
  • 1 garlic bulb, broken up into cloves
  • 1 tablespoon olive oil
  • salt and black pepper

Place the fish in a dish. Mix together all the spice rub ingredients in a bowl and rub into the fish. Cover and marinate in the refrigerator for 30 minutes.

Mix all the cumin potato ingredients together and put on a baking sheet. Place in a preheated oven, 200°C (400°F), Gas Mark 6, for about 40 minutes or until crisp and golden.

Heat a griddle or frying pan until hot and cook the fish for 2 minutes on each side until crisp and golden. Serve with the potatoes and a mixed salad.
