Spiced Eggy Fruit Bread with Berry Yogurt

  • 2 eggs
  • 25 g (1 oz) caster sugar
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons milk
  • 25 g (1 oz) butter
  • 4 slices of fruit bread
  • 100 g (3 1/2 oz) mixed berries
  • 8 tablespoons thick Greek yogurt or fromage frais
  • 4 teaspoons clear honey, to serve
  • Beat the eggs in a bowl with the sugar, cinnamon and milk. Heat the butter in a large heavy-based frying pan. Dip the fruit bread slices, 2 at a time, into the egg mixture, covering both sides, then lift into the hot pan and fry for 1–2 minutes on each side until golden. Repeat with the remaining fruit bread slices.
  • Mix half the berries into the yogurt or fromage frais.
  • Serve the warm fruit bread slices with spoonfuls of the fruit yogurt, scattered with the remaining berries and drizzled with the honey.
