Spiced Caramelized Pineapple with Rum

  • 50 g (2 oz) butter
  • 4 tablespoons caster sugar
  • 625 g (1 1/4 lb) pineapple flesh, cut into bite-sized pieces
  • 2–3 star anise
  • 1 cinnamon stick
  • 2–3 tablespoons of dark rum
  • cream or ice cream, to serve
  • Heat the butter in a large frying pan until it begins to foam.
  • Add the sugar, pineapple, star anise and cinnamon stick and cook for 5–6 minutes over a high heat, stirring continuously, until the sugar mixture starts to caramelize.
  • Pour in the rum and stir to mix well. Cook for a further 1–2 minutes, then remove from the heat and serve immediately with a dollop of cream or ice cream.
