Spanish Prawns with Chorizo

  • 1 tablespoon olive oil
  • 150 g (5 oz) chorizo, thickly sliced
  • 2 garlic cloves, sliced
  • 250 g (8 oz) large raw peeled prawns
  • 50 ml (2 fl oz) dry sherry
  • handful of chopped parsley
  • salt and pepper
  • crusty bread, to serve
  • Heat the olive oil in a large frying pan, add the chorizo and cook for 1 minute on each side until just golden and crisp. Remove from the pan. Add the garlic and cook for 30 seconds. Then add the prawns and cook for 3 minutes until golden.
  • Return the chorizo to the pan and carefully pour over the sherry. Season to taste with salt and pepper. Cook for 1 minute, then scatter over the parsley and serve with plenty of crusty bread.
