  • 12 thick slices of French bread
  • 2 large garlic cloves, halved
  • 2 tablespoons extra virgin olive oil, plus extra for drizzling
  • 250 g (8 oz) tzatziki
  • 250 g (8 oz) hot smoked trout, flaked
  • chopped dill, to garnish
  • pepper

Toast the bread in a preheated griddle pan or under a preheated grill.

While still hot, rub the toast all over with the garlic halves and sprinkle with the oil. Top each piece with a large spoonful of tzatziki and pile on the trout. Season to taste with pepper and serve garnished with chopped dill and drizzled with extra oil.
