Smoked Trout and Rice Noodle Salad

  • 3 tablespoons vegetable or groundnut oil
  • 1 teaspoon Thai fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon light soy sauce
  • 375 g (12 oz) cold cooked rice noodles
  • 200 g (7 oz) smoked trout trimmings, cut into strips
  • 1 bunch of fresh coriander, chopped
  • 1 red chilli, deseeded and chopped
  • 1 small cucumber, finely sliced
  • 1 red pepper, finely sliced
  • Combine the oil, fish sauce, lime juice and soy sauce in a jar with a tight-fitting lid, and shake well to combine.
  • Place the noodles in a large bowl with the remaining ingredients and toss with the dressing. Heap into 4 deep bowls and serve.
