Smoked Salmon and Chive Mayonnaise

cook 10 mins
  • 120 g (3 3/4 oz) smoked salmon trimmings
  • 1 teaspoon lemon juice
  • 3 tablespoons mayonnaise
  • 2 teaspoons chopped chives (optional), plus extra to garnish
  • salt and pepper
  • brown bread, toasted
  • lemon wedges (optional)
  • Place the smoked salmon trimmings in the bowl of a small food processor or mini chopper and add the lemon juice, mayonnaise, chives, if using, and a generous pinch of black pepper. Blend until the salmon is finely chopped but not completely smooth. (Alternatively, if you do not have a food processor, chop the smoked salmon as finely as possible by hand, then place it in a bowl and stir in the other ingredients, mixing well to combine.)
  • Scrape the mixture into a small bowl and season with salt to taste. Spread the mixture onto the toast and garnish with chives, if using. Serve with lemon wedges, if desired.
