  • 150 g (5 oz) lamb's lettuce
  • oranges or blood oranges, cut into segments
  • 100 g (3½ oz) smoked duck breast, thinly sliced
  • seeds of 1 pomegranate
  • 50 g (2 oz) shelled pistachios
  • juice of ½ blood orange
  • 1 small shallot, finely chopped
  • 1 tablespoon red wine vinegar
  • 1 teaspoon wholegrain mustard
  • 4 tablespoons olive oil

Arrange the lamb's lettuce on 4 large serving plates, add the orange segments and slices of duck. Scatter over the pomegranate seeds and pistachios.

Make the dressing by putting the ingredients in a screw-top jar and shaking well to combine. Drizzle the dressing over each salad, and serve immediately.
