Smoked Duck, Orange and Watercress Salad

  • 2 large oranges
  • 1 tablespoon rice wine vinegar
  • 3 tablespoons vegetable oil
  • 150 g (5 oz) watercress
  • 1 head of chicory
  • 1 spring onion, sliced
  • 150 g (5 oz) radishes, sliced
  • 250 g (8 oz) sliced smoked duck breast
  • salt and pepper
  • Cut the peel from the oranges using a sharp knife. Divide the oranges into segments by cutting between the membranes, holding them over a bowl to catch the juice. Mix the juice with the rice wine vinegar and oil and season well.
  • Toss the dressing with the watercress, chicory leaves and spring onion. Arrange the salad on serving plates with the orange segments, radishes and smoked duck.
