Smoked Chicken Bruschetta

  • 1/2 ciabatta loaf, cut into 1 cm (1/2 inch) slices
  • 2 tablespoons olive oil
  • 1 garlic clove, crushed
  • 2 spring onions, finely chopped
  • 4 ripe tomatoes, finely chopped
  • 1 tablespoon chopped basil
  • 1 tablespoon balsamic vinegar
  • 1 smoked cooked chicken breast, torn into small pieces
  • salt and pepper
  • Place the bread slices on a baking sheet. Mix together the oil and garlic and brush over the bread. Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 10 minutes until crisp.
  • Meanwhile, mix together the spring onions, tomatoes, basil and balsamic vinegar. Season with salt and pepper, then toss in the chicken pieces.
  • Spoon the tomato mixture on to the toasts to serve.
