6 tablespoons plain or chive and onion cream cheese
1/4 cucumber, sliced (optional)
125 g (4 oz) smoked salmon trimmings
1 tablespoon chopped chives (optional)
4 teaspoons lemon juice
Arrange the bagels, cut side up, on a baking sheet and toast under a grill preheated to a medium setting for 2–3 minutes until golden.
Spread the bottom halves if the bagels with the cream cheese and top with the cucumber, if using. Scatter the smoked salmon trimmings over the cucumber and sprinkle over the chopped chives, if using. Drizzle with lemon juice and season generously with pepper.
