Sin-Free Macaroni Cheese with Tomato

Ingredients
  • 400 g (13 oz) macaroni
  • 2 tablespoons cornflour
  • 500 ml (17 fl oz) milk
  • 250 g (8 oz) silken tofu
  • 150 g (5 oz) Cheddar cheese, grated
  • 15 g (1/2 oz) Parmesan cheese, grated
  • 1 large tomato, sliced
  • salt and pepper
Directions
  • Cook the pasta in a large saucepan of salted boiling water according to the pack instructions until al dente.
  • Meanwhile, place the cornflour in a small saucepan and whisk in 4 tablespoons of the milk until smooth. Gradually add the remaining milk, then bring to the boil and simmer until slightly thickened.
  • Place the tofu in a food processor or blender and whizz until a smooth paste forms. Add in the milk mixture and process until smooth. Stir in most of the cheeses and season well.
  • Drain the pasta, then stir through the tofu sauce. Spoon into an ovenproof dish and scatter over the remaining cheese, then arrange the tomato on top.
  • Place in a preheated oven, 190°C (375°F), Gas Mark 5, for 15 minutes or until golden, crispy on top and cooked through.
