Simple Herb, Chilli and Saffron Broth

Ingredients
  • 850 ml (1 1/2 pints) boiling water
  • 2–3 dried red chillies
  • 2 teaspoons cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon saffron threads
  • small bunch of flat leaf parsley leaves and stalks
  • small bunch of coriander leaves and stalks
  • small bunch of mint leaves
  • 4–6 peppercorns
  • 1 teaspoon sea salt
Directions
  • Pour the measurement water into a saucepan set over a medium heat. Add the remaining ingredients and boil gently for 8–10 minutes.
  • Strain and serve between courses, or as a digestive.
