Simple Baked Leeks and Sweet Potatoes

  • 4 small sweet potatoes
  • 4 teaspoons sea salt
  • 4 leeks, trimmed, halved and sliced
  • 150 ml (1/4 pint) white wine
  • 2 tablespoons extra virgin olive oil
  • 75 g (3 oz) Parmesan cheese, grated
  • 2 garlic cloves, crushed
  • 40 g (1 3/4 oz) pine nuts

  • Prick the sweet potatoes with a knife or fork, then wash and rub with the salt. Bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 25 minutes until tender.
  • Meanwhile, place the leeks in a shallow ovenproof dish and sprinkle with the wine and oil. Season with pepper. Mix together the cheese, garlic and pine nuts in a bowl, then sprinkle over the leeks.
  • Cover with foil and place in the oven for 15 minutes, then remove the foil and cook for a further 12–13 minutes.
  • Halve the sweet potatoes and serve with the leeks.
