  • 100 g (3½ oz) rocket leaves
  • 4 figs, halved or quartered if large
  • 150 g (5 oz) Serrano ham, sliced
  • 1 tablespoon finely chopped shallot
  • 1 thyme sprig, leaves stripped and finely chopped
  • 1 tablespoon sherry vinegar
  • 3 tablespoons extra virgin olive oil
  • salt and pepper

Make the dressing. Mix together the shallot, thyme and vinegar in a bowl. Season well, then whisk in the oil until well combined.

Toss the rocket with a little of the dressing, then arrange on a serving plate with the figs and ham. Drizzle over the remaining dressing and serve.
