Seared Prawns with Squid Ink Pasta

  • 400 g (13 oz) squid ink spaghetti
  • 5 tablespoons olive oil
  • 3 garlic cloves, finely chopped
  • 1–2 red chillies, deseeded and chopped
  • 200 g (7 oz) large raw peeled prawns
  • 75 ml (3 fl oz) dry white wine
  • handful of parsley, finely chopped
  • salt
  • Cook the pasta in a large pan of lightly salted boiling water according to the pack instructions.
  • Meanwhile, heat the oil in a large frying pan, add the garlic and chillies and cook for 30 seconds. Add the prawns and cook for 1–2 minutes on each side until turning golden. Add the wine and cook until nearly boiled away.
  • Drain the pasta, reserving a little of the cooking water. Add the prawns and juices to the pan, along with a little cooking water to loosen it if necessary. Stir through the parsley and serve.
