Seared Harissa Tuna Steaks

  • 1 tablespoon olive oil, plus extra for oiling
  • 1 teaspoon harissa paste (see page 70)
  • 1 teaspoon runny honey
  • 1 teaspoon sea salt
  • 4 tuna steaks, about 150 g (5 oz) each
  • small bunch of coriander, finely chopped, to garnish
  • couscous
  • lemon wedges
  • Mix together the oil, harissa, honey and salt in a small bowl, then rub over the tuna.
  • Heat a lightly oiled large griddle pan or heavy-based frying pan until hot, add the tuna and sear for 2 minutes on each side until browned on the outside but still pink in the centre. Garnish with the coriander and serve with couscous, and lemon wedges to squeeze over.
