Seared Chilli & Garlic Prawns

  • 5 tablespoons olive oil
  • 3 garlic cloves, chopped
  • pinch of dried chilli flakes
  • 500 g (1 lb) large raw peeled prawns
  • handful of parsley, chopped
  • salt and pepper

Heat the oil in a large frying pan, add the garlic and cook for 30 seconds, then add the chilli flakes and prawns and cook for a further 2 minutes until golden.

Sprinkle over the parsley and turn the prawns over. Cook for a further 1–2 minutes until the prawns turn pink and are just cooked through. Season with salt and pepper and serve immediately.
