cooked wholemeal rice or ready-made mash, to serve
Heat the oil in a large heavy-based frying pan and cook the sausages over a medium-high heat for 2–3 minutes until beginning to turn golden. Add the peppers and cook for a further 3 minutes, stirring occasionally, until softened.
Add the smoked paprika and stir well, then add the tomatoes and cook for a further 2 minutes until piping hot and the sausages are cooked through.
Serve hot ladled on to wholemeal rice or ready-made mash.
