Sausage, Tomato and Pepper Pan-Fry

  • 1 tablespoon olive oil
  • 24 baby cocktail sausages, wrapped in bacon
  • 1 thinly sliced red pepper
  • 1 thinly sliced yellow pepper
  • 1/2 teaspoon smoked paprika
  • 400 g (13 fl oz) can chopped tomatoes with herbs
  • cooked wholemeal rice or ready-made mash, to serve
  • Heat the oil in a large heavy-based frying pan and cook the sausages over a medium-high heat for 2–3 minutes until beginning to turn golden. Add the peppers and cook for a further 3 minutes, stirring occasionally, until softened.
  • Add the smoked paprika and stir well, then add the tomatoes and cook for a further 2 minutes until piping hot and the sausages are cooked through.
  • Serve hot ladled on to wholemeal rice or ready-made mash.
