Sausage & Broccoli Pasta

  • 175 g (6 oz) pasta shapes
  • 250 g (8 oz) broccoli, cut into florets
  • 1 tablespoon olive oil
  • 4 good-quality pork sausages
  • pinch of chilli flakes
  • 6 tablespoons vegetable stock (see page 94 for homemade)
  • 2 tablespoons grated Parmesan cheese

Cook the pasta in boiling water according to the instructions on the packet, adding the broccoli about 3 minutes before the end of the cooking time.

Meanwhile, heat the oil in a frying pan. Add the sausages and fry for 4–5 minutes over a medium heat until browned all over. Remove from the pan and cut each into 4 or 5 pieces. Return to the pan, add the chilli flakes and stock and cook for a further 2 minutes.

Drain the pasta and broccoli and toss together with the sausage mix. Serve sprinkled with the Parmesan and place under a preheated grill for 2–3 minutes, if liked.
