  • 1 lime, roughly peeled
  • 2 cm (¾ inch) piece fresh root ginger, peeled
  • 1 garlic clove, peeled
  • 3 tablespoons smooth peanut butter
  • 3–4 tablespoons coconut milk
  • ½ teaspoon soy sauce
  • 1 tablespoon chopped coriander leaves
  • chicken kebabs, to serve

Juice the lime with the ginger.

Transfer the juice to a food processor or blender, add the garlic, peanut butter, coconut milk and soy sauce and process until combined. Stir in the chopped coriander. Serve with chicken kebabs.
