Salmon Stew with Mashed Potato

Ingredients
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • 400 g (13 oz) can chopped tomatoes
  • 1 red pepper, deseeded and chopped
  • 200 ml (7 fl oz) fish stock
  • 875 g (1¾ lb) potatoes, peeled and chopped
  • 500 g (1 lb) salmon fillets, cut into large chunks
  • 125 g (4 oz) raw peeled king prawns
  • 50 g (2 oz) unsalted butter
  • 2 teaspoons creamed horseradish
  • small handful of chopped parsley
  • salt and pepper
Directions
  • Heat the oil in a large saucepan over a medium heat, add the onion, garlic, cumin and paprika and cook for 3–4 minutes.
  • Add the chopped tomatoes, red pepper and stock and bring to a simmer. Cook for 8–10 minutes.
  • Meanwhile, cook the potatoes in boiling water for 12–15 minutes, until tender.
  • Add the salmon and prawns to the tomato mixture and cook for 4–5 minutes.
  • Drain the potatoes and mash with the butter, horseradish and some salt and pepper.
  • Scatter the parsley over the salmon stew and spoon over the mash.
