Salmon and Watercress Salad

Ingredients
  • 3 tablespoons extra virgin olive oil
  • juice of 1 orange
  • ½ teaspoon mustard
  • ½ teaspoon caster sugar
  • 75 g (3 oz) watercress
  • ¼ cucumber, chopped
  • 2 oranges, peeled and segmented
  • 2 tablespoons toasted walnuts
  • 1 avocado, peeled, stoned and sliced
  • 175 g (6 oz) smoked salmon strips
  • 4 gluten-free pitta breads, toasted, to serve (optional)
Directions
  • Whisk together the oil, orange juice, mustard and sugar in a small bowl to make a dressing.
  • In a large bowl, toss together the watercress, cucumber, oranges, walnuts and avocado.
  • Toss with the dressing and smoked salmon and serve with the toasted pitta breads, if liked.
