Salmon and Rice Bhajis

Ingredients
  • 2 x 170 g (6 oz) cans salmon, drained and flaked
  • 1 small onion, sliced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried chilli flakes
  • 2 tablespoons chopped coriander
  • 75 g (3 oz) ready-cooked white rice
  • 1 egg, beaten
  • 1–2 tablespoons plain flour
  • 2 tablespoons rapeseed oil
  • 150 g (5 oz) natural yogurt
  • 1/2 cucumber, grated
  • 1 tablespoon chopped mint
  • salt and pepper
Directions
  • Place the salmon, onion, spices, coriander and rice in a large bowl and mix well. Stir in the egg and season well. Mix in enough of the flour to form a stiff mixture. Using wet hands, shape into 20 small balls.
  • Heat the oil in a large frying pan, add the bhajis and fry for 3–4 minutes, turning once, until golden.
  • Meanwhile, mix together the yogurt, cucumber and mint in a bowl. Serve with the bhajis.
