Sage Liver and Mash

  • 600 g (1 1/4 lb) shop-bought ready-made mashed potatoes
  • 450 g (14 1/2 oz) lambs’ liver, sliced thinly
  • 2 tablespoons flour, seasoned
  • 50 g (2 oz) butter
  • 4–5 sage leaves, chopped
  • Heat the mashed potatoes according to the packet instructions.
  • Meanwhile, dust the lambs’ liver in the seasoned flour.
  • Heat the butter in a frying pan and cook the liver with the sage leaves for 1–2 minutes on each side.
  • Serve with the warmed mashed potatoes, pouring the butter and juices over the potatoes.
