Rum and Raisin French Toast

  • 4 eggs, beaten
  • 1 teaspoon vanilla extract
  • 75 ml (3 fl oz) single cream
  • 4 tablespoons rum
  • 1/2 teaspoon ground cinnamon
  • 4 thick slices of raisin bread, halved
  • 25 g (1 oz) butter
  • Mix together the eggs, vanilla extract, cream, rum and cinnamon. Dip the raisin bread slices in the mixture and leave to soak for 2 minutes.
  • Heat a large, nonstick frying pan. Add a little butter and swirl around the pan. Cook the bread for 2–3 minutes on each side until golden.
