Rosemary, Coriander & Lemon Rub

prep 5 mins cook 2–3 mins
  • 2 tablespoons coriander seeds
  • 2 tablespoons chopped rosemary
  • grated rind of 1 lemon
  • salt and black pepper

Dry-fry the coriander seeds in a frying pan over a high heat for 2—3 minutes until they begin to pop and release their aroma. Cool the spices and mix with the rosemary, lemon rind and some salt and pepper.

Use as required or store in an airtight container for up to 2 weeks.
