Rocky Road Ice Cream Sundaes

  • 8 tablespoons shop-bought Belgian chocolate sauce
  • 100 g (3 1/2 oz) chocolate chip cookies, broken into small pieces
  • 16 small scoops of vanilla ice cream
  • 200 g (7 oz) pink and white marshmallows
  • a few mini marshmallows
  • a little grated chocolate
  • Place the chocolate sauce in a saucepan over a low heat and warm through.
  • Meanwhile, place a handful of the biscuits in each of 4 tall sundae glasses. Add 2 scoops of vanilla ice cream to each glass. Add 25 g (1 oz) of the marshmallows to each sundae, then spoon 1 tablespoon of the warm chocolate sauce over each. Repeat the layers, finishing with the chocolate sauce.
  • Decorate with a few mini marshmallows and a little grated chocolate. Serve immediately with long spoons.
