Rocket, Chilli and Ricotta Spaghetti

  • 400 g (13 oz) spaghetti
  • 1 tablespoon olive oil
  • 1 garlic clove, finely chopped
  • 1 red chilli, deseeded if liked, and finely sliced
  • 200 g (7 oz) rocket leaves
  • 150 g (5 oz) ricotta cheese
  • salt and pepper
  • Cook the pasta in a large saucepan of salted boiling water according to the pack instructions until al dente.
  • Meanwhile, heat the oil in a small frying pan, add the garlic and chilli and cook for 30 seconds until beginning to brown. Remove from the heat.
  • Drain the pasta, reserving a little of the cooking water, and return to the pan. Stir through the chilli oil, adding a little cooking water to loosen if needed. Season well.
  • Stir through the rocket, spoon into serving bowls and top with the ricotta. Serve immediately.
