Meals and Courses

  • 250 g (8 oz) rocket
  • 20 g (¾ oz) finely grated Parmesan cheese
  • 40 g (1½ oz) Parmesan cheese shavings
  • 4 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ½ teaspoon Dijon mustard
  • salt and pepper

Make the dressing by whisking the lemon juice, oil and mustard. Season to taste with salt and pepper.

Put the rocket in a large salad bowl, sprinkle over the Parmesan and mix lightly. Pour over the dressing and toss to combine. Garnish the salad with the Parmesan shavings and serve.
