Roasted Sausages with Parsnips and Carrots

  • 8 pork sausages
  • 1 onion, cut into wedges
  • 2 large carrots, cut into wedges
  • 2 large parsnips, cut into wedges
  • 4 garlic cloves, unpeeled
  • 2 tablespoons olive oil
  • 1 teaspoon runny honey
  • handful of rosemary sprigs
  • salt and pepper
  • Place the sausages, onion, carrots, parsnips and garlic in a large, shallow roasting tin. Toss together with the oil and season to taste.
  • Place in a preheated oven, 200°C (400°F), Gas Mark 6, for 20 minutes, giving the tin a good shake halfway through cooking. Drizzle over the honey and rosemary, then return to the oven for a further 5–10 minutes until golden and cooked through.
