Roasted Salmon with Peach Salsa

  • 1 1/2 tablespoons olive oil
  • 4 salmon steaks, about 150 g (5 oz) each
  • 2 peaches, stoned and chopped
  • 1/2 teaspoon finely grated fresh root ginger
  • juice of 1/2 lime
  • 1 tablespoon finely chopped red onion
  • 1/2 green chilli, sliced
  • handful of basil, chopped
  • salt and pepper
  • Rub 1/2 teaspoon of the oil over the salmon steaks and season well. Cook under a preheated hot grill for 5 minutes. Turn over and cook for a further 3–5 minutes until just cooked through.
  • Meanwhile, mix the remaining oil with the remaining ingredients. Spoon over the salmon to serve.
