Special Diet

Ingredients
  • 2 red peppers, halved, cored and deseeded
  • 2 yellow peppers, halved, cored and deseeded
  • 1 small red onion, cut into 8 wedges
  • 2 runner beans, trimmed and cut into small batons
  • 1 courgette, sliced
  • 3 garlic cloves, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon cumin seeds
  • salt and pepper
  • 100 g (3 1/2 oz) feta or goats' cheese, to serve (optional)
Directions
  • Place the pepper halves, cut side up, in a roasting tin and divide the vegetables and garlic between them.
  • Sprinkle with the oil and cumin seeds and season with salt and pepper. Place in a preheated oven, 190°C (375°F), Gas Mark 5, for 25 minutes until tender. Sprinkle with feta or goats' cheese, to serve, if liked.
