Roasted Honey Peaches

  • 2 tablespoons orange blossom honey
  • 1 vanilla pod, split lengthways
  • 2–3 teaspoons sesame seeds
  • 4 peaches, halved and stoned
  • vanilla ice cream or crème fraîche, to serve (optional)
  • Pour the honey into a small saucepan. Scrape the seeds from the vanilla pod and add the seeds and pod to the pan. Heat gently, stirring occasionally. Stir in the sesame seeds.
  • Place the peaches in a roasting tin and pour over the honey mixture. Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 20–25 minutes until the peaches are soft. Baste a couple of times with the juices.
  • Serve warm with vanilla ice cream or crème fraîche, if liked.
