Pour the honey into a small saucepan. Scrape the seeds from the vanilla pod and add the seeds and pod to the pan. Heat gently, stirring occasionally. Stir in the sesame seeds.
Place the peaches in a roasting tin and pour over the honey mixture. Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 20–25 minutes until the peaches are soft. Baste a couple of times with the juices.
Serve warm with vanilla ice cream or crème fraîche, if liked.
