Roasted Cauliflower and Cashew Nut Salad

Ingredients
  • 1 large cauliflower, cut into florets
  • 400 g (13 oz) can chickpeas, rinsed and drained
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground ginger
  • ½ teaspoon garam masala
  • 4 tablespoons olive oil
  • 100 g (3½ oz) cashew nuts
  • 150 g (5 oz) natural yogurt
  • 4 tablespoons lemon juice
  • ½ teaspoon Dijon mustard
  • 150 g (5 oz) baby spinach leaves
  • salt and pepper
Directions
  • Place the cauliflower in a roasting tin with the chickpeas, spices, some salt and pepper and 2 tablespoons of the oil. Roast in a preheated oven, 220°C (425°F) Gas Mark 7, for 15 minutes, then toss in the cashew nuts and roast for a further 10 minutes.
  • Meanwhile, whisk together the remaining oil, yogurt, lemon juice and mustard to make a dressing.
  • Put the spinach on a large serving plate and spoon over the spiced cauliflower.
  • Drizzle with the yogurt dressing and serve.
